My biggest ever period of climbing was a few years back and looked like this, nowhere near an Everest in any one of those weeks, that'll be a decent challenge.

Strava used to a climbing challenge called the Rapha Rising - it was an Everest in 9 days so you got two weekends to do extra riding that you couldn't fit into a working week. The only downside for Australia was that it was in July.

The Festy 500 is a great idea to ride 500km from Chrissy eve till New Years eve, you get 8 complete days.
Usually 40° road or gravel rides in the heaviest family commitment week of the year.
